EDC Salt

A while back I realized that most of my mediocre meals dining out could be resolved with a little bit of salt. (I know, groundbreaking revelation.)

Maldon used to sell little travel tins of their famous flaky sea salt, which I thought was genius! Unfortunately I never pulled the trigger on one and it looks like it’s no longer available.

The good news is, you can buy blanks of the sliding tins they use on Amazon for dirt cheap! So I made my own.

Protip: I marked which direction the case slides with a Sharpie to make it easy.

I also stash mine in an EDC bag arrow pointing down, so that I don’t accidentally open it trying to pull it out.

Enough

Noma, consistently regarded as the best restaurant in the world, is officially closing it’s doors in 2024 after 20 years.

I’m sad that I’ll probably never get to experience the original Noma. But the saddest part of the NYTimes article wasn’t the fact that Noma was closing. It was this:

After a series of pop-ups in Mexico, Australia and Japan brought Mr. Redzepi even more acclaim in the food world, he told us what he really wants is to go on vacation with his family.

My wife and I have been talking a lot about what “enough” means as we both plan our businesses and lives.

Redzepi doesn’t strike me as a man who got into the high fine dining for the money. Noma exist as an exercise in mastery. But the question of enough is still the same.

How many times does one need to be on the best restaurant list over a 20 year career before you can relax and enjoy it?

My wife and I recently learned one of our beloved neighborhood joints Pig Beach is closing next week.

It got us thinking about other spots we miss, including Talde, where we had an amazing whole roasted branzino. It was one of those meals that can convert a fish hater.

I came across the Instagram post of the exact meal scrolling through my history today. And coincidentally it was exactly 10 years ago.

I’m constantly amazed by how fast time passes us.
